Food safety knowledge and practices and their related factors among orphanage food handlers in DKI Jakarta province


This cross sectional study was aimed to assess food safety knowledge and practice of orphanage food handlers in DKI Jakarta Province. Study was done in March 2011, involving 90 food handlers from 41 registered orphanages in DKI Jakarta Province.
Almost all orphanage food handlers never experienced training on food safety. Food safety knowledge of orphanage food handlers generally was sufficient and knowledge on personal hygiene of orphanage food handlers was generally good. However, food handlers’ knowledge on microbial hazard was mostly lacking. Food safety practices of orphanage food handlers generally were improper; practices on food preparation and handling were occurred from purchasing activity to storage. Personal hygiene practice, especially on hand washing, was poor implemented. (THESIS)
